How to Make Spam Sushi!

I recently had my GOOD ENOUGH book launch party at Dutton's Bookstore in Brentwood. I made sure my guests had fun with a lot of entertainment (music, reading, lots of food! See picture gallery for the party photos!)

One thing I didn't get to do at my party was a cooking demonstration. I was going to demonstrate how to make SPAM "Kimbap," which is one of the three SPAM recipes in my novel, inspired by the Spam-related food I grew up with.

So here is a virtual reality cooking demonstration of this chapter's recipe! Below is the list of ingredients from the book, plus a step-by-step photo demonstration. Kids, don't try this at home without adult supervision!

I'm very excited by this photo gallery - my other dream in life is to host my own Food Network TV show, even though I'm not a real chef. :) Hey, a girl can dream.... hmmmm.... cooking... YA novels... one day I will write the ultimate YA foodie novel.

My Mom's Spam Recipe #3 - Spam Kimbap (AKA Spam Sushi Rolls)

Ingredients:

- 1 can of SPAM
- 1 jar of kimchi
- 2 cups washed and cooked sticky white rice
- Rice wine vinegar
- Sugar
- Salt
- Shoyu (or just any soy sauce)
- Mirin (Japanese sweet rice wine)
- 1 cucumber
- 1 carrot
- Spinach
- Nori (seaweed sushi wrappers)
